BBQ Pulled Chicken
One of my favorite spots to order take out is Mel’s Kitchen – they offer amazing homemade food at very low prices; oh and they deliver, which totally takes them to the next level in my book. When perusing the web for their menu I stumbled across another Mel’s Kitchen; however, this Mel’s Kitchen is a cooking blog with an extensive recipe index. I am so glad I found the wrong (or maybe right) Mel, because her recipes are to die for. One of my favorites to make is her Grilled Caprese Chicken.
I am just now starting to realize the deliciousness that is barbecue sauce. I used to swear I didn’t like it. Maybe I did, maybe I didn’t, maybe I was pretending, but either way, now I do. The other day I used Mel’s recipe for slow cooker BBQ Pulled Chicken, which even boasts a homemade barbecue sauce. I love a slow cooker recipe – throw all the ingredients in, come back 6 hours later and voila – dinner is ready! I can’t stress enough how easy this recipe was, I even used frozen chicken. The chicken was so tasty and held up really well for leftovers (which I am usually inclined to toss), so I can definitely foresee this becoming a staple in my recipe rotation.
